It is always fun to reminisce with your kids about things from you own childhood. This comes in the form of foods, toys, sports and more. We love to cook a meal that is from our childhood and explain to the kids that Grandma used to cook this for us. I know it’s funny, but the look in Logan’s eyes every time we tell him something like that is one of amazement and it’s so special!
One of my favorite child hood memory meals is a nice Sloppy Joe sandwich. They were always so good, and it seems like we were always doing something fun as a family when we had them. The classic Sloppy Joe will always have a special place in my heart!When it comes to a good Sloppy Joe, everyone knows that Manwich is as good as it gets.
Manwich is a great solution for an awesome, easy meal any day of the week. We truly love the original Sloppy Joe, which is best enjoyed with both hands and a messy chin. However, we decided to take that sweet tangy sauce of Manwich and get creative with a fun and very tasty recipe.
I asked my daughter Kora what we should make with the Manwich, she looked in the fridge, then looked in the freezer and screamed tater tots while she was jumping up and down.
So, here is our tasty Manwich & Tater Tot Casserole, which will leave you wanting more.
Sloppy Joe Tater Tot Casserole . . . yum!
Ingredients
1 can Original Manwich (or get crazy and go for Bold Manwich!)
1 lb ground turkey or beef
16 oz bag of tater tots
1 cup frozen corn (or use canned corn)
8 oz shredded cheddar cheese
½ diced onion
Sour Cream (optional)
Salt
Pepper
Directions
Preheat the oven to 400 degrees.
First, brown the meat in a skillet, I like to season it with salt & pepper as it is browning.
Once browned, add the can of Manwich, corn, onions, and half of the cheese (4 oz). Mix it all together with the skillet on low, cook until cheese melts and ingredients are nicely combined.
Pour your Sloppy Joe mixture into a 13” x 9” pan.
Place your tater tots across the top of you Sloppy Joe mix, make sure to keep it as a single layer of tater tots.
Sprinkle the remaining cheese over the top of the tater tots.
Bake in the oven at 400 degrees for 25 minutes.
Let the casserole cool for 5 minutes, then dig in, feel free to top with sour cream, or enjoy it as is!
This is our very own creation that we made as a family at home. We loved it and leftovers were even better the next day!
