With all this wintery weather we’ve been having I’m already in the mood for spring. While the cold and snow still has me using the slow cooker for hearty and warm meals, I’ve also been in the mood for something light, airy, and fun. One of my favorite treats is good bread. There’s just nothing like it for me and often I’ll eat a slice or two of delicious bread instead of dessert and sometimes will even enjoy it as my breakfast or lunch.
I thought about making a banana or zucchini bread but then thought it would be fun to try pineapple. I was excited with how simple this recipe was and how it gave me the light spring flavors I was craving. This bread is wonderful and I’ll be making it again. The kids have been enjoying it as well and have been looking forward to a slice or two as an after school snack.
I’ve found it really brings out the flavors to eat it either warm right from the oven or heated in the microwave for a few seconds and then topped with butter. Here’s the recipe, I hope you enjoy it as much as we have!
Ingredients
- 1 20 oz can of crushed pineapple
- 1 1/2 cups of white sugar
- 4 eggs
- 4 cups flour
- 2 tsp salt
- 2 tsp baking soda
Instructions
- Preheat oven to 350 degrees. Grease two 9 X 5 X 3 inch loaf pans
- In a large bowl mix undrained pineapple, sugar, and eggs
- Add flour, salt, and baking soda, mix well
- Pour into loaf pans
- Bake for 1 hour
If you enjoy coconut you could also add coconut flakes to this bread as well for a little more Hawaiian flavor.

Oh wow I never thought to make pineapple bread, it looks and sounds delicious. What an easy recipe, I will have to try it and see how the kids like it.
