Even though Cinco de Mayo has now passed, Dave enjoys spicing up with his meals all year round. He likes to put hot sauce and salsa in and on everything. We’ve been trying to eat a bit healthier and have been eating a lot of salads. In a bit of a splurge not too long ago we had tacos with pork carnitas and had some leftovers. Dave thought it would be great to use the leftovers in a salad. I was intrigued and once he got to work, it smelled and looked so good I couldn’t wait to try it!
We were both amazed at how flavorful it was! While we like salads sometimes they do need a bit of pep and this carnitas salad definitely has it.
It’s easy to prepare and we are adding it to our list of go-to recipes when we are crunched for time. We liked this recipe so much we look forward to making it again soon and enjoying it often!
Ingredients
- 4 cups torn salad greens
- 6 oz pork carnitas
- 1/2 cup frozen corn, boiled or steamed
- 1/4 cup salsa
- 1/4 cup shredded cheese, taco blend
- 2 tsp hot sauce
Instructions
- Place salad greens in a bowl, top with salsa, carnitas, cheese, and hot sauce
- Serve and enjoy!
