3 or 4 Red Potatoes cut into 1 inch wedges
1 tablespoon of olive oil
1 tablespoon of taco seasoning
1. In a large resealable plastic bag combine potatoes, oil, and taco seasoning. Shake to coat the potatoes.
2. Place the potatoes in an 8 x 8 baking dish. Bake uncovered at 450 degrees for 40 minutes stirring potatoes every 10 minutes.
3. Eat and enjoy!
We love this really simple but flavorful Taco Potatoes recipe. It’s only takes a few minutes to prepare, is a delicious side dish, and the potatoes are wonderful folded into a taco shell too.
One night I needed a side dish for dinner and wasn’t sure what to make. I noticed that we had potatoes sitting in a bowl just waiting to be chopped and seasoned. I looked through our seasonings and spices and nothing was standing out. I grabbed a packet of taco seasoning and a light bulb went off. While it takes a bit for this recipe to cook it is so delicious and flavorful that it’s worth it. It gets lots of compliments when I serve it and everyone is always surprised that it’s only 3 ingredients.
While I love using the simple store bought taco seasoning, one day I’d like to try it making my own taco seasoning one time. I’ve seen a few recipes floating around for it and it looks simple enough to try that I’m sure that it would add and extra freshness to the dish making it even more delicious. I’d also love to try topping it with cheese and bacon one time and then dipping it in Ranch dressing. It would then become an indulgent side dish but a delicious one at that! It’s a great dish that can be kept simple like the recipe above or easily customized with toppings and dips that could take it in a new direction.
