Earlier in the week, I posted that October is National Pork Month and listed a great deal on pork at Costco. The other day, I was happy to take advantage of that deal and made an original recipe that I’m pretty proud of.
The recipe calls for Boneless Sirloin Tip Roast. So we decided to head out to Costco to pick up our pork.
That’s 4 hearty protein-packed dinners for $13.68! Needless to say, I left impressed and I was glad to hear that Costco is continuing their weekly pork deals through the rest of October. With prices like that, we’ll be back.
We headed home and I was excited to get out my slow cooker and start getting creative. I mixed and matched ingredients until I came up with an easy recipe I’d be proud to serve a crowd.
After cooking in the crockpot for 6 hours, the pork was incredibly juicy and tender. The seasonings and sun-dried tomatoes added a sweet and savory punch that made it hard to resist. Here’s the delicious and flavorful recipe I created that I can’t wait to try again.
Sun-Dried Tomato Slow Cooker Sirloin Tip Pork Roast
- 1 Boneless Sirloin Tip Roast
- 1 cup of sun-dried tomatoes
- 1 cup of barbecue sauce
- 1/2 cup of mild salsa
- 1/4 cup chopped onions
- 1/4 cup Italian dressing
- 2 tablespoons of Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Place roast in slow cooker and with all ingredients leaving the sun-dried tomatoes for last.
- Top with sun-dried tomatoes.
- Cook 6-8 hours on low.
- Make sure pork has cooked to 160 to 145 degrees F, with a three-minute rest.
- Serve and enjoy!
