I do not know if I could possibly blame nesting or the fact that I have been home on bed rest for the past four weeks, but the moment the Potluck Favorites Bookazine arrived in the mail the other day I flipped through it, picked a recipe, made a grocery list, and headed out to the store to buy my ingredients.
I have been in a cooking rut for such a long time; making the same things over and over again. And most recently, I have not been doing much cooking at all. Tired Dad Paul or whatever carryout we choose has been feeding our family this past month.
Well on Tuesday, I surprised or more appropriately shocked my family by putting together an amazing Turkey Chili Pot Pie thanks to Potluck Favorites.
I loved the fact that this recipe has diced sweet potatoes and uses ground turkey over the traditional ground beef. This dish made way more than enough for my family of four, but would be a great dish to bring to any reunion or potluck dinner.
There was so much of this great dish, that I called my dad to come over and grab some dinner. I lost count at how many servings he had, not sure if he stopped at seconds or if he went back for thirds. At first when I dished out the pot pie for the girls, I was faced with some opposition to what I was serving them. That is mostly my own fault for being in my cooking rut and not “spicing” things up as food options for the girls.
After I showed the girls the sweet potatoes, they dug in. Sophie is a more adventurous eater than Selina. Sophie finished off her whole bowl and said, “Mommy that was really good.” Selina however, was still hesitant and only ate the sweet potatoes out of the dish.
The Potluck Favorites bookazine is from the Editors of Good Housekeeping, Redbook, and Country Living. There are great main and side dish, salad, pasta, and burger recipes. The dessert section has many mouth watering choices to make for the next big gathering. I know that I have picked out the P B & J Sandwich Cookies.
I am sure that come this summer I will be pulling out this magazine and making many of these dishes for our little man’s baptism celebration when he finally arrives.
