Easy Halloween Recipe: Ghoulish Green Graveyard

Can you believe that I had never eaten an avocado until about a year ago? My only excuse is as a kid I probably didn’t think I’d like guacamole and for some reason stuck to that belief for far too many years.

AvocadosThank goodness I decided to give avocados a try because they are now one of my favorite foods. I love eating them with just a bit of salt, mixed up in guacamole, folded into a breakfast burrito, and sliced onto sandwiches.

Since avocados are so new to me I enjoy finding fun ways to use them in recipes and was really excited to learn that Avocados from Mexico is hosting a Spookamole Halloween Recipe Contest.

Since Halloween is the third biggest party holiday of the year (behind New Year’s Eve and Super Bowl Sunday) and while Haas avocados are grown all year round in Mexico, they ripen during the fall and winter months. So what better timing for an Halloween themed avocado recipe contest?

I decided to get a little creative and enter the contest myself with my Ghoulish Green Graveyard recipe.

Easy Halloween Recipe Ghoulish Green GraveyardI’m pretty excited about this dish. Not only is it very similar to veggie pizza, which is one of my favorite party appetizers, it’s very easy to make, it’s a healthier festive food option, and it’s delicious & fun too!

Ghoulish Green Graveyard

Ingredients

  • 1 can refrigerated Italian bread dough
  • 2 flour tortillas
  • 6 oval butter crackers
  • 2 avocados
  • 6 oz. cream cheese
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. parsley
  • 1/4 tsp. salt
Directions
1. Preheat the oven to 325 degrees. Spray small cookie sheet with cooking spray.
2. Unroll Italian bread dough on to cookie sheet. Stretch it to reach all sides but leave no gaps.
3. Cook bread dough according to package directions. Take care not to overcook.
4. Cut ghosts, jack-o-lanterns, and cats out of flour tortillas using kitchen scissors or a sharp knife.
5. Coat tortillas shapes with cooking spray on both sides. Sprinkle salt on each side.
6. Bake tortilla ghosts and cats on a cookie sheet for 3-4 minutes and flip. Bake another 3-4 minutes and flip. Continue this process until they are crisp and firm, but not burnt. Bake tortilla jack-o-lanterns seperately. Check every 2 minutes, they burn quickly. Some browning is nice for jack-o-lantern color just be wary of burning.
7. Slice and mash both avocados in a small mixing bowl. Add in and mix cream cheese and Worcestershire sauce.
8. After Italian bread is done baking and has cooled completely, spread avocado cream cheese mixture generously on top.
9. Push tortilla ghosts, cats, and jack-o-lanterns through avocado mixture & into bread. Break butter crackers into 3/4 their size and place as gravestones into graveyard.
10. Sprinkle parsley over top for even more grass effect.
11. Refrigerate 20 minutes prior to serving and then slice, eat, and enjoy!
*Avocado & cream cheese mixture can be seasoned to taste. Add a little garlic powder, basil, and/or other seasonings for enhanced flavors.

    Very creative! I was the samewayabout guacamole until about 5 years ago, now ilove that and home made salsa. Can’t believe Haloween is so close.

    Love this recipe! Can’t wait to try it! Growing up we had a HUGE avocado tree in our back yard, that gave off the biggest avocados! I never ate them! Didn’t want to try them
    at all! Tried them about 7 years ago and now I can’t get enough of them! Love, love, love them! We no longer have that avocado tree, it stopped bearing fruit about 10 years ago and it was chopped down :(
