This time of year the weather is warming up and everyone is planning picnics, bbq’s, and menus full of delicious food including an all time favorite – corn on the cob! That’s why I’m excited to share the fantastic corn on the cob grilling hack below to make your picnic or bbq even more memorable.

With the weekend ahead it’s the perfect time to do some meal planning for that backyard barbecue or lakeside picnic and nothing says warm weather like corn on the cob.
I was just at a local store already selling it for 10 cents an ear so I made sure to stock up! We are looking forward to enjoying it this weekend and since we have so much corn, I’ve been keeping my eye out for unique ways to prepare it.
That’s why I was excited to find this Spicy Grilled Corn recipe on the Butterball App.
I love how easy it is to prepare and how flavorful the ingredients are. Dave likes a bit of kick to his food and I know he will enjoy this recipe as is. For the kids, I’ll simply leave off the red pepper flakes but prepare it the same. We are all looking forward to corn on the cob this weekend and the weather is supposed to be beautiful, so it will be the perfect reason to serve this corn at our backyard bbq.
Not only is this recipe flavorful but it comes with a great corn on the cob grilling hack – foil packets!
The foil packets make this recipe both hands off and portable – perfect for any picnic or backyard bbq.
Once you prepare the corn and put it on the grill, you only need to turn it once. Also, because you are grilling the corn in foil packets, after it is done you can pack it up and take it on your picnic right along with you. Brilliant!
While I enjoy making and eating delicious food, I love cooking hacks like this that allow you to spend more time with family and friends rather than in the kitchen or at the grill.
Here’s the recipe:
Spicy Grilled Corn
Ingredients:
- 2 tablespoons butter, softened
- 1 tablespoon chopped fresh parsley
- 2 teaspoons lemon juice
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 4 ears corn, husks and silks removed
Directions:
- Prepare grill for direct cooking. Combine butter, parsley, lemon juice, salt, black pepper and red pepper flakes in small bowl. Brush mixture evenly over corn.
- Place two sheets of foil (about 12 x1 8 inches each) on work surface; center 2 ears of corn on each piece of foil. Bring upsides off oil; fold over top and edges to seal packets.
- Grill packets over medium-high heat, covered, about 15 minutes or until corn is tender, turning once.

Sorry…you may need to slightly adjust ingredient list. I have never really measured the ingredients. Only way to mess it up is to add too much lime juice. Pretaste mixture, lime should be slight upfront but not overpowering. Lime flavor will intensify slightly during cooking.
Nice and easy. Try the same tchnique but use 4 tablespoons of olive oil, 2 tablespoons of melted butter, juice of 1/2 lime (potent stuff), 1 tsp salt, 1/2 tsp black pepper, 1-2 tablespoons of chili powder. Should be almost as thick as warm pancake syrup. Smear on corn and cook the same way. Cut from cob after cooking for a more consistent mix.
