We love this really simple but flavorful Mexican Potatoes recipe. It’s only takes a few minutes to prepare, is a delicious side dish, and the potatoes are wonderful folded into a taco shell too.

That sounds delicious! And easy! I made potatoes with a blackened seasoning on them once and that was good too…although not an appropriate tie-in for Cinco de Mayo. lol
No, we don’t celebrate Cinco de Mayo, but that is a great and simple recipe. Love it.
I’ve been hearing all about Cinco de Mayo today for the first time. I guess we don’t celebrate that here in Wisconsin….
That does sound good-and easy (two of my favorite things!)
Cinco de Mayo is more known to me as my eldest daughter’s baptism day. She will adore it.
Yum! Sounds quick and easy, and I have red potatoes I need to use in the pantry right now. I may have to try this tonight!
Thanks Tired Mom!
This sounds so easy and tasty! I wonder why I so seldom make potatoes.
I enjoyed the recipe but I added my own lil touch to it. The last 10 mins I added shredded cheese and taco seasoning. When it cooled I topped it with salsa and sour cream. It was delicious.
Never thought to use taco seasoning – yum!
I love potatoes! This sounds like such a yummy, quick way of “spicing” potatoes up. I will definitely being trying this soon!
Looks really good!
