We love this really simple but flavorful Mexican Potatoes recipe. It’s only takes a few minutes to prepare, is a delicious side dish, and the potatoes are wonderful folded into a taco shell too. It’s a perfect side dish for a busy week night or to celebrate Cinco de Mayo.

Looks good and oh so easy. Thanks for the recipe.
I would like the nutritional value of the recipes or some way to find it. Thanks
These look great. I love how easy they are to make. You could even through a little shredded cheddar cheese on them. Thanks for the recipe.
I think I’d love it but unsure about the 8 yr old. However we do do our potatoes this way and just choose different seasonings each time…like ranch or rosemary.
Sounds good! Very simple.
These look really good! I never thought of putting Taco seasoning on potatoes! Thanks for the idea.

Looks really good!
I love potatoes! This sounds like such a yummy, quick way of “spicing” potatoes up. I will definitely being trying this soon!
Never thought to use taco seasoning – yum!
I enjoyed the recipe but I added my own lil touch to it. The last 10 mins I added shredded cheese and taco seasoning. When it cooled I topped it with salsa and sour cream. It was delicious.
This sounds so easy and tasty! I wonder why I so seldom make potatoes.
Yum! Sounds quick and easy, and I have red potatoes I need to use in the pantry right now. I may have to try this tonight!
Thanks Tired Mom!
Cinco de Mayo is more known to me as my eldest daughter’s baptism day. She will adore it.
That does sound good-and easy (two of my favorite things!)
I’ve been hearing all about Cinco de Mayo today for the first time. I guess we don’t celebrate that here in Wisconsin….
No, we don’t celebrate Cinco de Mayo, but that is a great and simple recipe. Love it.
That sounds delicious! And easy! I made potatoes with a blackened seasoning on them once and that was good too…although not an appropriate tie-in for Cinco de Mayo. lol
