With Cinco de Mayo around the corner I’ve been in the kitchen working on dishes to celebrate the holiday.

I recently took some time to browse the Cinco de Mayo recipes on the Kraft Recipes site and was inspired by the selection of creative recipes.
I decided to try my hand at Cilantro Lime Chicken Tacos. We enjoy the combination of cilantro and lime and have enjoyed it in rice, on chicken breasts, and in other ways before so I was excited to see how this combination would taste in tacos.
It was fantastic!
This recipe was a big hit and very flavorful. Dave enjoyed it so much he asked me to make it again right away. I also thought it was delicious and was thrilled with how easy it was to make.
I simply steamed and shredded the chicken breasts, mixed the chicken and sauce ingredients together in a bowl, filled the taco shells with the mixture, and baked the tacos in the oven. That was it!
It makes a wonderful weeknight meal because it only takes a few minutes to prepare. It’s also a fantastic dish for a Cinco de Mayo party and the flavor combination is sure to be a festive hit.
I also found that it freezes well. Simply wrap the tacos in plastic wrap and store in an airtight container in the freezer. To reheat just pop them in the microwave until they are warm – I’ve found cutting them in half partway through heating will ensure the middle warms up nicely.
This recipe is festive, fantastic, and fun. It’s a delicious and easy way to celebrate Cinco de Mayo and it will be our menu when we celebrate May 5th and we look forward to making it often throughout the year as well.

Yum! Those chicken taco’s look like they would taste pretty delish. It also helps that I love both cilantro and lime :)
