It&#8217;s been going well and we&#8217;ve enjoyed adding new, flavorful, and nutritious meals to our menu. One of my favorite dishes is this Easy Chicken, Rice &amp; Veggies recipe. <p>2 Servings</p>
<p><strong>Ingredients</strong></p>

<li>1 can (5 oz) of Hormel Premium Chunk Chicken</li>
<li>1 cup rice, cooked</li>
<li>1/2 cup broccoli, chopped</li>
<li>1/2 cup carrots, chopped</li>
<li>1/4 cup frozen peas</li>
<li>pinch of salt</li>
<li>pinch of pepper</li>
</ul>
<p><strong>Directions</strong></p>
<ol>
<li>Place broccoli, carrots, and peas in a microwave steam bag. Microwave for 1 1/2 minutes.</li>
<li>Dish rice into bowls, top with chicken and vegetables.</li>
<li>Add pinch of salt and pepper.</li>
<li>Serve warm and enjoy!</li>

<li>1 pkg (16 oz.) elbow macaroni</li>
<li>1 lb (16 oz.) VELVEETA®, cut into 1/2 inch cubes</li>
<li>1 can (10 oz) RO*TEL® Diced Tomatoes &amp; Green Chilies, undrained</li>
<li>1/2 cup milk</li>
</ul>
<div><strong>Directions</strong></div>
<div>
<ol>
<li>Cook macaroni as directed on package, omitting salt. Drain.</li>
<li>Microwave VELVEETA® and RO*TEL® in large microwaveable bowl on high for 5 minutes or until cheese is completely melted, stirring after 3 minutes.</li>
<li>Stir in milk.</li>
<li>Add macaroni to cheese sauce and stir evenly to coat.</li>

<p>One of the ways that we make our weeknight meals special is by adding a bit of a twist on traditional dishes. I like to play with recipes and make them just a bit different then the original.</p>

<li>1 can (8 oz) Pillsbury Refrigerated Crescent Dinner Rolls</li>
<li>1 1/2 cups cooked &amp; diced corned beef</li>
<li>1 cup sauerkraut, drained</li>
<li>1/2 cup shredded Swiss cheese</li>
<li>1/4 cup Thousand Island dressing</li>
<li>2 tbsp spicy brown mustard</li>
<li>1/4 tsp salt</li>
<li>1/4 tsp pepper</li>
</ul>

<p>1. Heat oven to 350 degrees &amp; lightly coat regular size muffin tin with cooking spray.</p>
<p>2. Unroll Pillsbury Crescent Dinner Rolls &amp; press perforations, removing seams.</p>
<p>3. Cut Crescent Dinner Rolls into 6 squares. Place each square into a muffin cup, allowing the edges to hang over sides. Only 6 cups will be used, leave the others empty unless making a double-batch.</p>
<p>4. In a bowl combine corned beef, sauerkraut,Thousand Island, brown mustard, salt, and pepper.</p>
<p>5. Add about 2 tablespoons of corned beef mixture to each crescent cup, filling to level. Top with shredded Swiss cheese.</p>
<p>6. Bake 8-10 minutes until crescent cups are golden brown.</p>
<p>7. Serve warm and enjoy!</p>
<p>Serves 6.</p>
<p><em>*Note:</em> This recipe is made even better by using a food processor. Use it to crumble slices of Swiss cheese then set aside. Next, combine slices of corned beef, sauerkraut, Thousand Island, brown mustard, salt &amp; pepper in food processor and pulse until finely diced. Then add corned beef mixture to crescent cups &amp; top with Swiss cheese.</p>

<li>1/2 cup of milk</li>

<li>Turn crockpot on (8 hours) setting. Rinse chicken.</li>
<li>Using a fork poke chicken a few times and then rub in poultry seasoning. Place in bottom of slow cooker.</li>
<li>Add broth, water, carrots, celery, peas, pepper, basil, and oregano. Cover and cook for 8 hours.</li>
<li>For noodles, in a large bowl mix together flour and salt. Then add in eggs, butter, and milk.</li>
<li>Knead dough for 5 minutes or until smooth.</li>
<li>Cover bowl with a towel and let sit for 20 minutes</li>
<li>On a floured surface, roll out dough and then cut into desired lengths and shapes.</li>
<li>Let noodles dry for 2 hours.</li>
<li>After soup is done shred the chicken with a spoon and boil water for noodles. Cook noodles for about 10 minutes.</li>
<li>Pour soup in bowls and add noodles. Add a dash of pepper to each bowl.</li>
<li>Serve warm and enjoy!</li>
</ol>
<p><em>*Note:</em> I like using chicken breasts because there&#8217;s no worry about small bones sneaking into the kids&#8217; bowls. Some people prefer the flavor that bones add, however, so you may prefer using a whole chicken or other parts. Also, while I liked making the noodles myself and didn&#8217;t mind cutting them, if I did this on a regular basis, a pasta maker would be very handy and make this recipe even easier. So if you have one, definitely use it instead of handcutting the noodles.</p>
<p><em>To Store:</em> Store chicken and vegetables in one air-tight container, broth in another, and noodles in a third. When reheating pour all three into a bowl and microwave for 2-3 minutes.</p>

<p>So when recently I made the <a title="Spicy Velveeta Shells &amp; Cheese Crescent Cups" href="http://www.2wired2tired.com/spicy-velveeta-shells-cheese-crescent-cups" target="_blank">Spicy Shell &amp; Cheese Crescent Cups</a>, I thought it might be fun to replace the mac &amp; cheese with scrambled eggs &amp; bacon. I made these Egg &amp; Bacon Tartlets and they were perfect for Christmas morning, would be delicious served at a fancy brunch, and even work well as a grab-and-go meal for those busy mornings. Enjoy!</p>
<h2>Egg &amp; Bacon Tartlets</h2>

<li>2 cans of refrigerated crescent rolls</li>
<li>4 eggs</li>
<li>4 slices of bacon &#8211; cooked and chopped</li>
<li>1/4 cup shredded cheddar cheese</li>
<li>2 tbsp butter</li>
<li>1/2 tsp salt</li>
<li>1/2 tsp pepper</li>
</ul>

<li>Preheat oven to 350 degrees. Lightly coat two mini-muffin tins with cooking spray.</li>
<li>Open and unroll crescent rolls. Press into rectangles, removing seams. Cut each rectangle into 12 squares. Place each square into a muffin cup, allow edges to hang over sides.</li>
<li>Combine eggs, bacon, cheese, salt, and pepper into a bowl. Mix well.</li>
<li>In skillet, heat butter over medium-low heat until melted. Add egg &amp; bacon mixture. Continually stir while cooking and scramble eggs.</li>
<li>After eggs are set, add eggs to each crescent cup/tartlet until just until full.</li>
<li>Place mini-muffin tins into oven and bake for 10 minutes until tartlets are golden brown.</li>
<li>Serve warm and enjoy!</li>

<p><strong>What You Need</strong><br />
4 squares BAKER&#8217;S Unsweetened Chocolate, chopped<br />
3/4 cup butter<br />
2 cups sugar<br />
3 eggs<br />
1 tsp. vanilla<br />
1 cup flour<br />
1 jar (7 oz.) JET-PUFFED Marshmallow Creme<br />
1 pkg. (8 squares) BAKER&#8217;S Semi-Sweet Chocolate, chopped<br />
1 cup PLANTERS Creamy Peanut Butter<br />
3 cups crisp rice cereal</p>
<p><strong>Make It</strong></p>
<ol>
<li>HEAT oven to 350°F.</li>
<li>MICROWAVE unsweetened chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted. Stir in sugar. Add eggs and vanilla; mix well. Stir in flour. Spread onto bottom of 13&#215;9-inch pan sprayed with cooking spray.</li>
<li>BAKE 30 to 35 min. or until toothpick inserted in center comes out clean. (Do not overbake.) Cool completely. Cover with marshmallow creme.</li>
<li>MICROWAVE semi-sweet chocolate and peanut butter in large microwaveable bowl on HIGH 2 min., stirring after each minute until mixture is well blended. Stir in cereal; spread over marshmallow creme layer. Refrigerate 2 hours before cutting into bars.</li>

Run paring knife around edges of pan to loosen dessert. Remove dessert from pan; place on cutting board. Cut into bars.</p>

35 PREMIUM Saltine Crackers<br />
1/2 cup butter or margarine<br />
1/2 cup packed brown sugar<br />
1 pkg. (8 squares) BAKER&#8217;S Semi-Sweet Chocolate, chopped<br />
1 cup chopped PLANTERS Pistachio Lovers Mix<br />
1/2 cup dried cranberries</p>
<p><strong>Make It</strong><br />
HEAT oven to 400ºF.<br />
PLACE crackers in single layer in foil-lined 15x10x1-inch pan.<br />
COOK butter and sugar in saucepan on medium-high heat until butter is melted and mixture is well blended, stirring occasionally. Bring to boil; cook 3 min. without stirring. Spread onto crackers.<br />
BAKE 5 to 7 min. or until topping is golden brown. Immediately sprinkle with chocolate; let stand 5 min. or until softened. Spread over crackers; top with nuts and cranberries. Cool. Break into pieces.</p>

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened<br />
15 OREO Cookies, finely crushed (about 1-1/4 cups)<br />
1/4 cup PLANTERS Creamy Peanut Butter<br />
1 pkg. (2-layer size) yellow cake mix<br />
1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding<br />
1-1/4 cups water<br />
4 eggs<br />
1/4 cup oil<br />
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding<br />
1 cup cold milk<br />
1/4 cup ready-to-spread vanilla frosting<br />
24 JET-PUFFED HOLIDAY MALLOWS Marshmallows<br />
1/2 cup BAKER&#8217;S ANGEL FLAKE Coconut</p>
<p><strong>Make It</strong></p>
<ol>
<li>HEAT oven to 350ºF.</li>
<li>MIX cream cheese, cookie crumbs and peanut butter until blended. Shape into 24 (1-inch) balls; set aside.</li>
<li>BEAT cake mix, dry chocolate pudding mix, water, eggs and oil with mixer until blended; spoon 1 Tbsp. into each of 24 paper-lined muffin cups. Place cookie ball in center of batter in each cup. Cover with remaining batter.</li>
<li>BAKE 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool cupcakes in pans 10 min. Meanwhile, beat dry vanilla pudding mix, milk and frosting with whisk 2 min.</li>
<li>REMOVE cupcakes from pans; place on wire racks. Spread with frosting. (No need to completely cool cupcakes first.) Top with marshmallows and coconut.</li>
</ol>
<p><strong>How to Store:</strong><br />
Store in tightly covered container in refrigerator.</p>
<p><strong>Substitute:</strong><br />
For a snowy-white frosting, prepare using JELL-O Cheesecake Flavor or White Chocolate Flavor Instant Pudding.</p>

			<content:encoded><![CDATA[<p>As a busy mom, I&#8217;m often on the lookout for quick and easy dinners that are flavorful and filling. I love one pot meals. They always make for easy preparation, cooking, and clean-up is a breeze. I also enjoy using Betty Crocker&#8217;s boxed potatoes. I usually use them as a side dish, but decided recently to try to find a one pot recipe using the potatoes that would also be a main dish.</p>
<p>I found a recipe on the Betty Crocker website for Skillet Ham &amp; Vegetables Au Gratin and since I had a box of <strong><a href="http://www.bettycrocker.com/products/potatoes" target="_blank">Betty Crocker Casserole Au Gratin</a></strong> on hand, it sounded perfect.</p>
<p>The recipe was really easy and I adapted it a bit.  Instead of ham I used diced rotisserie chicken (which I also love to cook with), and since I didn&#8217;t have a large onion, I used dried minced onion. After combining all of the ingredients in the skillet, I was able to cover it and let it simmer for 10 minutes. I came back to stir occasionally, but in between I was able to set the table and hang out with Kora and Logan while it cooked. I love these kinds of meals!</p>
<p>The dish turned out amazing! Kora &amp; Logan said it reminded them of macaroni and cheese, but with potatoes, so they were thrilled. We all enjoyed the recipe so much that there were no leftovers and we added it to our list of favorites. I&#8217;m happy to share the recipe below and hope you find it as delicious and easy and we did!</p>

<li>Stir in chicken, Potatoes, Sauce Mix, hot water, pepper, salt, and onion.</li>
<li>Heat to boiling. Reduce heat. Cover and let simmer for 10 minutes, stirring occasionally.</li>
<li>Add cheese and froze vegetables, stir until well mixed.</li>
<li>Cover and simmer 5 minutes longer, stirring occasionally.</li>
<li>Let stand 5 minutes before serving, until sauce thickens.</li>
<li>Serve warm and enjoy!</li>
