Almost No Sugar Banana-Applesauce Muffins

Banana Applesauce MuffinsLately, I’ve been on the look out for healthy recipes. Especially for snacks and ones that kids will enjoy. I found a recipe for Banana Muffins and played with it a bit. I’m excited to say I was able to make a really good muffin with almost no sugar.

Almost No Sugar Banana Applesauce Muffins

  • 1 1/2 cups flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 3 bananas, mashed
  • 1/4 cup brown sugar
  • 1/2 cup applesauce
  • 1 egg
  • 1/3 cup of butter, melted

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease muffin tin (10 cups).
  2. In a large bowl, mix together the flour, baking soda, baking powder and salt. In another bowl, beat together the bananas, sugar, applesauce, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into muffin tin.
  3. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    These do sound really good. I am up for trying anything with less sugar these days…not only for the kids, but for hubby and me too! Thanks for the recipe!
