Acorn Squash & Sausage Recipe

Acorn Squash RecipeEvery fall I look forward to one particular recipe that my mom makes – Acorn Squash & Sausage. It’s such a delicious seasonal recipe, filled with sweet and savory flavors that as soon as the temperature drops & the leaves start to turn, I’m can’t wait to serve it to my family. It’s also easily customized in a number of different ways to suit the tastes of each individual diner. Enjoy and Happy Fall!

Acorn Squash & Sausage

Ingredients

  • 2 Acorn Squash
  • 1 (10 oz) package of Hormel Little Sizzlers Sausage Patties
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
Directions
1. Preheat oven to 350 degrees.
2. Pierce the skin of each acorn squash with fork multiple times.
3. Put whole squash in baking pan and cook for 1 hour 10 minutes.
4. Remove when outside of squash is tender. Let cool 10 minutes.
5. While squash is cooling cook sausage patties as directed on the package.
6. Cut each acorn squash in half and scoop out seeds.
7. Place one (or more) sausage patties in the center of each squash.
8. Top each sausage with 1/2 tablespoon of butter.
9. Sprinkle brown sugar, cinnamon, and pumpkin pie spice over top of each sausage.
10. Serve and enjoy!

To show how this recipe can be customized I adapted it using both my mom’s classic dish and the Hormel Sausage-Stuffed Acorn Squash recipe.

    Acorn squash is one of my favorite foods of Fall. I love just baking it with butter, cinnamon, a touch of ground cloves. Adding the sausage to it will be even more “better”. Thanks for sharing.
